Prepare everything you need. Boil the potatoes and let them cool completely. It is better to use hard cheese, such as maasdam or parmesan.
Grate the potatoes and cheese on a fine grater, put them in a bowl. Add the cornstarch there. You can use either potato or corn starch.

Mix with your hands. The mixture should stick together and form a single lump.
Transfer everything to a sturdy plastic bag and roll it out with a rolling pin into an even layer about 2-3 mm thick.
Carefully cut the bag, and divide the dough into strips with a pizza cutter or knife.
To prevent the potato mixture from sticking, sprinkle the blade with cornstarch.

In a pan, heat vegetable oil, carefully place the blanks. Fry until lightly browned.

Potato sticks with cheese are ready. Serve with a sauce on the side.
