Prepare everything necessary.
Place honey in a saucepan. It can be either liquid or crystallized, it doesn't matter. Heat on the stove until it melts. Add baking soda.
2 tbsp honey, ½ tsp baking soda
Remove from the stove and stir until it lightens in color. This means that the soda has been neutralized. Add butter.
80 g butter
It will melt from the heat of the honey. Crack an egg.
1 pc egg
Add flour, ground cinnamon, and ginger.
320 g flour, ½ tsp ginger, ½ tsp cinnamon
Knead a soft dough. It is not sticky at all, pleasant to the touch.
Roll out to a thickness of 3 mm. Use cookie cutters to cut out shapes. If you don't have cookie cutters, you can simply cut into squares or rectangles with a knife.
Transfer to a baking sheet. If desired, make holes using a cocktail straw to hang on a Christmas tree or thread a ribbon.
Bake in the oven at 170℃ for 10-12 minutes. If the cookies are of different sizes, they will bake unevenly, so it's important to remove those cookies that have started to brown. The sugar-free ginger cinnamon cookies are ready.
