Prepare everything necessary. Choose a large and even onion.
Peel the onion and cut into rings 4-5 millimeters thick. Separate into rings, they will be of different diameters.

For the batter, place sour cream, egg yolk, ground garlic, and paprika in a bowl. You can also use other spices to taste.
1 pc egg, 1 tbsp sour cream, ¼ tsp garlic, ¼ tsp paprika
Mix, add flour, 2.5 tbsp heaped, leave the rest for breading.
3 tbsp wheat flour
Knead a thick dough. Pour in water.
50 ml water
Mix until smooth, it should flow off the fork in a ribbon.
1 pinch salt, 1 pc egg
In a separate bowl, beat the egg white with a pinch of salt into a stable foam. It will take a minute with a mixer, much longer by hand. Put half into the bowl with the dough.
Mix gently, trying to keep as many air bubbles as possible. Then introduce the remaining egg white. The batter will become noticeably fluffier and more porous.
Put the remaining 0.5 tbsp of flour in a plastic bag, add the onion rings. Shake to coat them with a thin layer of flour.
3 tbsp wheat flour
Using a fork, dip each onion ring into the batter, allowing the excess to drip off.
Lay out in a frying pan with well-heated vegetable oil. Fry over medium heat until browned on both sides. Everything happens very quickly. The shell swells during this process.
300 ml vegetable oil
The onion rings in batter are ready. It is better to serve them hot, but this snack is very tasty even when cold. Offer sauce as an addition.
