Prepare everything you need.
Separate the egg whites from the yolks. Place the yolks in a bowl, add half of the sugar.

Whisk with a whisk to dissolve the sugar. Add milk.

Add the sifted flour and baking powder. Stir. The batter will be quite thick.

Add a pinch of salt to the egg whites and start beating, it's faster and more convenient to do this with a mixer. After a few seconds, foam will appear, which means you can gradually add the remaining sugar. Continue beating until stiff peaks form.

Add half of the egg whites to the batter.
Mix with a spatula. The mixture will become more airy. Also add the remaining egg whites.
For baking, it is convenient to use metal culinary rings with a diameter of 8-10 centimeters. But if you don't have them, you can make molds out of parchment paper by cutting strips of 5 centimeters thick. Grease them with vegetable oil using a brush and shape them into rings. Thanks to the fat, the layers of paper will hold their shape.
Also apply oil to a well-heated frying pan. Place the prepared molds. Fill them with batter to two-thirds of the height. Pour in water to cover the bottom with a layer of a few millimeters.

Cover the pan with a lid and cook over low heat for 5 minutes. The pancakes will rise to the edge of the parchment paper.
Then carefully flip them over and cook for the same amount of time. But do not add water anymore.
Japanese souffle pancakes are ready. Just remove the parchment paper, transfer to a serving plate, and garnish as desired. It's delicious to drizzle with melted chocolate, add berries, mint. From this amount of ingredients, 3 pancakes were obtained.
