If you can't find almond flour, you can easily make it yourself. Just peel the almonds, dry them in the oven or in a pan, and grind them in a coffee grinder. At first glance, the process of making the filling may seem difficult, but in fact, it is easy and simple.
Prepare everything you need. The dough should be well warmed to room temperature.
First, make the almond cream. Break one egg into a bowl, add half of the sugar.

Using a spoon, shape it into rolls on a mat or parchment paper. Put in the freezer for 2-3 hours. The pieces should freeze well.
Roll out the puff pastry into a rectangle to a thickness of a few millimeters. Cut into triangles. Place a piece of almond filling at the base of each triangle.

Transfer to a baking sheet. Leave to rise for 15 minutes.
