Prepare everything you need.
In a bowl, combine flour and sugar (40 g), add cold butter cut into pieces.
150 g flour, 120 g sugar, 100 g butter
Chop with a knife, then quickly rub with your hands until crumbs form. The dough is ready. Put it in the refrigerator for now.
If the cherries are frozen, let them thaw slightly and remove the pits. Then let them thaw completely. There will be a lot of juice. Transfer the cherries together with the liquid to a saucepan. Add the cornstarch (15 g) and the remaining sugar.
300 g cherry, 20 g cornstarch, 120 g sugar
Mix, the cornstarch lumps dissolve well in the cherry juice. If using fresh cherries, there will not be enough juice, so the cornstarch should be diluted in a small amount of water beforehand. Place the saucepan on the stove. Stir constantly and bring to a boil. The cornstarch will thicken and the mixture will become thick, similar to jelly.
Spread two-thirds of the crumbs in the baking dish, here it is rectangular 16x20 cm. Press with your hands, making low sides.
Dust with a small amount of cornstarch.
Distribute the cherry filling.
Sift more cornstarch through a sieve. Sprinkle the remaining dough crumbs on top.
Place in the oven and bake at 170°C for 20 minutes. The pie is thin, so it bakes quickly. As soon as the surface is golden brown, remove it.
The sand cake with cherry and crumble is ready. You can serve the hot dessert with vanilla ice cream, it is also very tasty when cooled.
