  • Divide the cauliflower head into small florets and boil in salted water for 5–6 minutes.

  • While the cauliflower is cooking, clean the fish from skin and bones, and then cut it into small cubes. Also, divide the cheese into small pieces using a knife or directly with your hands.

  • Prepare the sauce. In a saucepan, melt the butter and quickly fry the flour in it until a characteristic nutty aroma appears.

  • Add cold milk to the fried flour and quickly stir the mixture with a whisk, avoiding the formation of lumps. While stirring constantly, bring the mixture to a boil and allow it to thicken.

  • Add pieces of gorgonzola to the hot sauce and stir until the cheese is completely dissolved. Add salt if necessary.
