Prepare the necessary ingredients. You can use any part of the chicken you like. We have chicken drumsticks that we have divided. They turn out to be much juicier than other parts of the chicken.
Season the chicken with salt and pepper, rub them into the skin with your hands.

Add minced garlic to the mayonnaise, mix and coat all the chicken pieces with the resulting sauce.

Peel the onion and cut it into thin half-rings, add to the chicken and mix. Leave to marinate for at least 40-45 minutes.

While the chicken is marinating, clean the pumpkin from seeds, fibers, and skin. Cut into large pieces, approximately 2x2 centimeters. Peel the potatoes, wash them and cut into smaller cubes, approximately 1x1 centimeter. Add salt, pepper, herbes de Provence, and vegetable oil and mix.

Take a baking dish, grease it with vegetable oil, put the potatoes and pumpkin in it, and then the chicken pieces and onion on top. Cover the dish with foil and put it in a preheated oven to 200 degrees Celsius for 35-40 minutes. After this time, check the readiness of the potatoes (you can pierce it with a toothpick) and the meat. Remove the foil and return the dish to the oven for another 20-25 minutes for the chicken to brown.
