Baked chicken legs with vegetables in the oven is a great standalone dish that can be served for a family lunch or dinner. The dish is colorful, fragrant, and healthy due to the pumpkin. The chicken is marinated, giving it a taste reminiscent of grilled meat.

- 800 g pumpkin
- 800 g potato
- 1 pcs onion
- 3 cloves garlic
- 70 g mayonnaise
- 1 pinch salt
- 1 pinch pepper
- 1 tsp herbes de Provence
- 2 tbsp vegetable oil
Instructions
- Prepare the necessary ingredients. You can use any part of the chicken you like. We have chicken drumsticks that we have divided. They turn out to be much juicier than other parts of the chicken.

- Peel the onion and cut it into thin half-rings, add to the chicken and mix. Leave to marinate for at least 40-45 minutes.1 pcs onion
- While the chicken is marinating, clean the pumpkin from seeds, fibers, and skin. Cut into large pieces, approximately 2×2 centimeters. Peel the potatoes, wash them and cut into smaller cubes, approximately 1×1 centimeter. - Take a baking dish, grease it with vegetable oil, put the potatoes and pumpkin in it, and then the chicken pieces and onion on top. Cover the dish with foil and put it in a preheated oven to 200 degrees Celsius for 35-40 minutes. After this time, check the readiness of the potatoes (you can pierce it with a toothpick) and the meat. Remove the foil and return the dish to the oven for another 20-25 minutes for the chicken to brown.
