Carrot ginger soup recipe is a simple and delicious dish that you must try when fresh carrots are available. Our recipe offers one of the easiest variations of French carrot soup with onions and potatoes, seasoned with cream, parsley, ginger, and curry.
Finely chop the onion, put it in a saucepan and sauté it in vegetable oil.
1 pc onion, 1 tbsp vegetable oil
Cut the carrots into large pieces about 0.5 cm thick, add them to the onion, and sauté together for another 5 minutes over medium heat.

Add peeled and diced potatoes to the sauté. Pour water or broth over the vegetables so that the liquid covers them by about 1-2 cm. Add salt and cook the soup over low heat for 20 minutes. Add spices 2-3 minutes before the end of cooking.

Puree the cooked vegetables with a blender until smooth.
Dilute the vegetable puree with cream to the desired consistency and bring to a boil.
200-250 ml cream
At the end of cooking, add finely chopped herbs to the soup and let it steep for a couple of minutes.
