Carrot ginger soup recipe
Carrot ginger soup recipe is a simple and delicious dish that you must try when fresh carrots are available. Our recipe offers one of the easiest variations of French carrot soup with onions and potatoes, seasoned with cream, parsley, ginger, and curry.

Ingredients
- 3 pcs carrots
- 2 pcs potatoes
- 1 pc onion
- 200-250 ml cream 10%
- 1 cup water or vegetable broth
- 1 tbsp vegetable oil
- ยผ tsp ginger dried
- ยฝ tsp curry
- parsley for garnish
- 1 pinch salt
Instructions
- Prepare the necessary ingredients.
- Finely chop the onion, put it in a saucepan and sautรฉ it in vegetable oil.1 pc onion, 1 tbsp vegetable oil
- Cut the carrots into large pieces about 0.5 cm thick, add them to the onion, and sautรฉ together for another 5 minutes over medium heat.3 pcs carrots
- Add peeled and diced potatoes to the sautรฉ. Pour water or broth over the vegetables so that the liquid covers them by about 1-2 cm. Add salt and cook the soup over low heat for 20 minutes. - Puree the cooked vegetables with a blender until smooth.
- Dilute the vegetable puree with cream to the desired consistency and bring to a boil.200-250 ml cream
