Today we share a recipe for very tasty sweet vareniki with cottage cheese filling. The specified amount of ingredients makes 20 medium-sized dumplings. Therefore, for a large family, the portion of dough and filling needs to be doubled or tripled.
Sift the flour into a deep bowl. Add salt and refined sunflower oil. Mix thoroughly.
140 g flour, ¼ tsp salt, 1 tbsp vegetable oil
In a small pot, combine water and milk. Bring the mixture to a boil over medium heat.

Add the just-boiled mixture of water and milk to the dry ingredients. Stir vigorously with a spatula to scald the flour with the liquid. This will make the dough very elastic and easy to work with.
Once the mass has cooled down a bit, gather the dough into a ball with your hands. Then it needs to be kneaded on the table. There is no need to grease or sprinkle the work surface with anything. After 3-4 minutes, the dough will become soft, smooth, and uniform. After kneading, leave the dough under a film or bowl for 20 minutes.
Filling
Prepare the filling. To the cottage cheese, add the yolk, granulated sugar, vanilla sugar, and a pinch of salt.
1 pc egg yolk, 1 tbsp sugar, 1 tsp vanilla sugar, 1 pinch salt, 250 g cottage cheese
Mash all the ingredients with a fork.
Divide the rested dough into 2 parts. Form "sausages" and divide each into 10 pieces. Then roll out each piece of dough with a rolling pin.
Place about 1 tsp. of filling in the center and pinch the edges.
Send the dumplings into boiling salted water. Once the dumplings float to the surface, cook them for about 2-3 minutes.
Serve the ready dumplings with sour cream. Optionally, the dish can also be garnished with jam, coconut flakes, or fresh berries. Enjoy your meal!
