Prepare the necessary ingredients. Rassolnik can be made with any broth, so instead of chicken, you can use any other meat at your discretion. Tomato paste can be replaced with ketchup without a pronounced taste.
Put the chicken in a pot with cold water and set it on the fire. Bring to a boil, reduce heat, add salt and cook for 20 minutes. Foam will appear during cooking, it should be carefully removed.
250 g chicken fillet, ½ tsp salt
Remove the chicken from the broth, cut it into pieces. Add diced potatoes, pre-rinsed rice, and chicken pieces to the broth. Cook for 15 minutes.

Cut the onion into small pieces and fry in a pan with vegetable oil until golden brown.

Add grated carrot on a coarse grater and fry with the onion.

Put the fried onion and carrot into the pot and continue to cook.
Cut the cucumbers into small pieces, if desired, you can grate them on a coarse grater. Put them in a pan and cook for 3 minutes. Add tomato paste, mix and simmer for another 3 minutes.

Add cucumbers to the pot. Leave for another 5-10 minutes.
Rassolnik with rice is ready. Serve hot. Rassolnik is especially delicious with a spoonful of sour cream added.
