Prepare the quail carcass and other ingredients from the list.
Pour cold water over the quail, bring to a boil, and remove all the foam that forms.

Add a small carrot and onion to the quail. Add salt.

Cook for about an hour. You can find recommendations that small birds are ready after 20-30 minutes. But in reality, after half an hour, the meat is still tough.
Remove the quail, onion, and carrot from the broth. Discard the onion, grate the carrot, and break down the carcass into several pieces.
Pour the vegetable broth into the broth. It's not necessary to add it, but with it, the soup will have a richer flavor.

Add homemade noodles.
100 g noodles
Add the grated carrot.
Cook until the noodles are ready. This can take from 3 to 7 minutes depending on the thickness of the dough.
Transfer the pieces of meat from the plate to the pot.
Bring the soup to a boil and turn off the heat.
Before serving, add finely chopped green onions to each bowl.
