Prepare the necessary ingredients.
Pour boiling water over ground coffee and leave to cool for 10-15 minutes.
1 tsp coffee, 50 ml water
In a bowl, combine eggs, granulated sugar, a pinch of salt, and sunflower oil. Beat slightly with a whisk.
2 pcs egg, 180 g sugar, 1 pinch salt, 100 g vegetable oil
Add sour cream and coffee (it should be slightly warm). Optionally, coffee in this recipe can be replaced with warm boiled water.
100 g sour cream
Next, introduce dry ingredients — flour, cocoa, and baking powder.
20 g cocoa powder, 170 g flour, 1 tsp baking powder
Stir with a whisk until smooth. The batter for chocolate muffins is ready.
Remove the pit from the cherries and add starch. Mix well.
200 g cherry, 1 tbsp starch
Fill the muffin tins with batter to ⅔.
Place 3-4 berries in the center of each muffin, slightly pressing them in.
Bake the chocolate muffins with cherries in a preheated 180 °C (356 °F) oven for 25 minutes.
Sprinkle cooled muffins with powdered sugar or decorate with whipped cream if desired. Enjoy your meal!
