Prepare everything necessary. The cottage cheese should be dry and granular, not paste-like.
It is convenient to knead the dough in a food processor. Pour the cottage cheese into the bowl, break the egg, add honey. If it is very sugary, heat it in the microwave.

Process for a couple of seconds. Add cocoa powder and cinnamon. You can also use other spices if you like. Ginger, nutmeg, and cloves would be suitable here.

Mix again. Add half of the whole grain flour and baking powder.

While the food processor is working, knead the dough in it, then transfer it to a plate and continue by hand, adding flour. The amount depends on the moisture of the cottage cheese, so watch the consistency. The dough should be slightly sticky. Regarding the flour, the rule here is: the less, the better, so the cookies will be softer.

Break off a small piece of dough with your hands, roll it into a ball, and place it on the baking sheet. If necessary, you can lightly dust your palms with flour.
Make the blanks for the future gingerbread cookies, lay them out on the baking sheet at a distance from each other, as they will increase in size during baking.
Put in the oven and keep for 15 minutes at 160 degrees Celsius.
The healthy chocolate gingerbread cookies are ready. They are soft, and while hot, slightly moist inside. After cooling, they become a bit denser. Yielded 18 pieces.
