Do you want to transport yourself to one of the Parisian cafes for a few magical minutes? You can easily do this even while being in your own kitchen. Just prepare tender, lacy, and incredibly aromatic creamy Crepes suzette with orange sauce.
We start with the orange sauce. Squeeze the juice from the oranges and evaporate it in a skillet with sugar over low heat until the sweet crystals are completely dissolved and the liquid volume is reduced by half. Remember to stir regularly to prevent burning.

After 15-20 minutes of slow heating, when the sauce is sufficiently caramelized, add the butter and immediately remove the skillet from the heat. Thoroughly mix the mixture, preferably with a whisk, to effectively combine the fat with the orange caramel. The sauce is ready.

While the orange juice is evaporating, fry the creamy crepes. Start by preparing the dough and mix all the dry ingredients: flour, sugar, salt, and vanilla extract. Add the eggs and mix everything thoroughly.
100 g flour, 15 g sugar, 2 pcs eggs, ¼ tsp salt, 1 tsp vanilla extract
To the egg-flour mixture, gradually add room temperature milk. Do this until the consistency of the dough resembles kefir. It is better to mix the dough with a whisk to ensure that there are no lumps. Finally, add melted butter.
250 ml milk, 30 g butter
Fry the crepes on both sides in a well-heated skillet. Before baking, you can grease the skillet with vegetable oil. It is not necessary to do this in the future.
Place the cooked crepes on a plate while still warm, pour the orange sauce over them, garnish with zest, and serve immediately. Enjoy your meal!
