Instructions
Prepare the necessary ingredients.
Melt the butter in a frying pan, add olive oil. Peel and chop the onion into random pieces and pour onto the pan.
40 g butter, 1 tbsp olive oil, 1 kg onion
Fry over low heat for 20-30 minutes. Stir every 3 minutes to allow the onion to brown properly. Over time, it will start to caramelize. The finished onion will have a reddish-brown color and a slightly sweet taste.
Pour in the wine and leave for a couple of minutes for it to evaporate. Add the flour and mix.
100 g wine, 1 tsp flour
Pour in 500 milliliters of broth or water. Season with pepper and salt. Add the bay leaf. Simmer over low heat until about half of the liquid has evaporated.

Fill individual baking dishes with the soup, leaving about 3-4 cm from the top.
Grate the cheese and sprinkle it over the onion mixture. Toast the bread in a frying pan for a couple of minutes until lightly browned and rub with garlic. Trim to fit the shape of the dish and place on top of the onion.

Place a layer of cheese on top of the croutons. Place in a preheated oven and cook for 7 minutes at a temperature of 200 ℃, until the cheese is melted and golden brown.
