Prepare everything necessary.
First, start with the dough. In a bowl, mix flour, 30 g of sugar, and salt. Add pieces of butter from the refrigerator.

Quickly rub together with your hands until crumbly. Pour in the water, which should be previously placed in the freezer to become icy.

Knead the dough. It will be soft but not sticky. Put it in the refrigerator for half an hour.
For the filling, frozen cherries are used here. Pit the cherries, place them in a saucepan. Also add starch and the remaining sugar.

Cook until thickened. If using fresh cherries and there is not enough juice, add 70 ml of water. Let it cool, then add half of the chocolate.

Roll out the dough into a circle, sprinkle with a small amount of starch.

Place the filling, distributing it in a circle so that a couple of centimeters remain from the edges. Sprinkle with pieces of the remaining chocolate.

Turn the edges over the filling, gathering in folds where necessary.
Bake in the oven at 170℃ for 20 minutes. The chocolate galette is ready. The filling is not too runny, but it is better to let the dessert cool to a warm state before serving.
