Prepare everything you need.
Wash the tomatoes, make cross-shaped shallow incisions, put them in a bowl and pour boiling water. After a minute, lower it into cold water. Thanks to this, the tomato peel will move away without any problems.

Heat vegetable oil in a frying pan and put diced onions. Fry until transparent, add chopped garlic.

Warm up for a minute and pour in small pieces of bell pepper.

After another minute, put the finely chopped tomato pulp, tomato paste, salt and spices. If they are not ground, you should grind the seasonings in a mortar or use a coffee grinder.

Fry on medium heat for 5-7 minutes. Most of the liquid should evaporate during this time. The resulting mass will look like porridge of medium density. Use a spatula to make small depressions where the eggs will be placed.
Carefully, one at a time, break the eggs.

Reduce the heat slightly and cook until the egg white catches. The yolk should remain liquid. Don't cover with a lid, otherwise, the egg turn into over easy.
Sprinkle with fresh herbs.
