Prepare everything you need. You can make shortcrust dough without whole-wheat flour at heart's ease, replacing it with ordinary wheat in the same volume. There is no need to pre-defrost the cherry if it is frozen.
You can knead the shortcrust dough in any convenient way. The fastest and easiest way is in a food processor. Pour both types of flour, salt, and half of sugar into the bowl. Put cold butter.
80 g flour, 80 g whole-wheat flour, 4 tbsp sugar, 1 pinch salt, 100 g butter
Twist until butter crumbs form, break the egg.

Turn on the technique again and knead the soft dough. It should gather well into a ball. Put it in a cellophane bag and put it in the refrigerator for half an hour.
Roll out the dough into a round layer a couple of millimeters thick. Leave 3-4 centimeters from the edges and sprinkle the middle, where the filling will be placed, with half of the starch.

Lay out the cherries, removing the pits.
200 g cherry
Sprinkle with the remaining starch and sugar. Wrap the dough on the filling, forming folds so that the galette comes out round. The edges should not completely cover the cherries.
4 tbsp sugar, 1 tbsp starch
Bake in the oven at 160℃ for 20 minutes. Galette with cherries can be served hot or cold at your wish. In the first case, it is very tasty to offer in addition a ball of vanilla ice cream.
