  • 2 pcs egg
  • 1 cup flour
  • 1,5 cup milk
  • ½ tsp sugar
  • 2 tbsp vegetable oil
  • 1 pinch salt

  • Prepare everything you need. Milk and eggs should be taken out of the fridge in a couple of hours so that the products are at room temperature.
  • Break eggs into a bowl, add sugar and salt. Sugar should be introduced even if you plan to serve blini with something salty. This is necessary for the balance of taste.

  • Mix, pour in 60-70 milliliters of milk.

  • At this stage, the dough should be thick. Dilute again with the same amount of milk.

  • And again introduce flour. By the time all the flour is used, the mass will come out thick. Now it remains to add the remaining milk. This step-by-step introduction of milk and flour avoids the formation of lumps. The dough may seem a little runny, as it should be. Pour in vegetable oil, mix.

  • Leave for half an hour so that the gluten swells. It is after this that the blini batter will acquire the desired consistency and will flow freely from the ladle.
  • Heat the frying pan and brush with vegetable oil. This is done only before the first blin, in the future, lubrication occurs due to the oil that is already in the dough. Pour the ladle of dough closer to the edge of the pan and, rotating it at a slight angle, let it spread evenly over the bottom.
  • After a minute, flip to the other side. The fire is medium. The blini should be slightly browned. Enjoy your meal!
