  • Segment the orange. First, cut off 3-4 slices and peel off a few zest strips, which after drying in the oven will become decorations for the pie. Then, using a grater, remove the remaining zest from the citrus. Free the pulp from the membranes and cut into cubes.

  • Spread the zest and orange slices intended for decoration on foil (if parchment is available, then better on it) and dry at a temperature of about 100 degrees until ready. This will take about 3 hours. If there is no time, you can dry at a higher temperature, risking getting burnt decorations.
  • For decoration, you can also use berries of real rowan. If it is frozen, then immerse the bunches in cold water, and then rinse.
  • Prepare the apples. For this, cut one apple into cubes (with the peel or without – depends on personal preferences and the thickness of the peel itself). Cut the second apple into thin slices.

  • Line the bottom of the mold with a ‘French shirt’, which will help later remove the finished sponge cake without damage. To do this, grease the bottom with any oil and sprinkle with a layer of semolina.
