  • 50 g butter

  • First, let’s prepare the sauce. Separate the yolk of one egg from the white and place it in a deep high container. Pour in 1 teaspoon of lemon juice. Add salt and whisk with an immersion blender until it increases in volume.

  • At the same time, melt 40 grams of butter in a pot and bring to a boil. As soon as the butter has boiled, immediately remove from the stove and pour it in a thin stream, continuing to whisk the yolk with a blender. Whisk for another 30 seconds. Leave for 5 minutes, during which time the sauce should thicken.

  • Put a pot of water on the fire. While the water is boiling, cut the bun along into two halves and slightly dry on both sides in a pan with butter.

  • Put the bacon or ham in the pan and fry until lightly browned.

  • Let’s start preparing the poached eggs. Line a small bowl with plastic wrap and grease with vegetable oil. Carefully break an egg onto the film so that the yolk remains whole. Lift the ends of the film and twist them.

  • Lower the eggs, holding the end of the film, into boiling water and hold for three minutes. This time is enough for the white to cook, and the yolk to remain liquid.

  • Place ham on each half of the bun. Remove the eggs from the pot, carefully remove the film, and place on top of the ham.

  • Pour Hollandaise sauce on top. If desired, you can sprinkle with fresh herbs and smoked paprika. Eggs Benedict are ready.
