Okroshka with kvas
Today on the table we have a refreshing, cold and fragrant okroshka with kvas. This soup is usually prepared on a hot summer day, as it is served chilled. It is convenient that everything can be done in advance and stored in the refrigerator for 2-3 days, using as needed. Kvas can be either homemade or store-bought. The main thing is that the drink is not too sweet. The okroshka turns out to be very tasty and refreshing, it can be served as a separate dish as a cold soup, or as an addition to the main course instead of a salad.

Ingredients
- 1 liter kvas bread-based
- 2 pcs potato
- 2 pcs egg
- 200 g sausage boiled doctor’s sausage
- 1 pcs cucumber fresh
- 1 bunch green onion
- 1 bunch parsley
- 1 pinch salt
Instructions
- Prepare everything necessary. First, taste the kvas itself and assess its flavor. If it is not very strong, I recommend adding 0.5 tsp of Russian mustard or horseradish to the vegetables. Here the kvas was dark, rich, not sweet, so nothing additional was required. Boil the potatoes in their skins, eggs hard-boiled.
- Lay out the cubes of boiled potatoes in a bowl.2 pcs potato

- Add the egg cubes and chopped herbs. Optionally, leave a few pieces of egg for garnish. Season with salt to taste.2 pcs egg, 1 bunch green onion, 1 bunch parsley
- Mix together.
- Next, there can be two options. The first: pour all with kvas and put in the refrigerator for 1-2 hours so that the okroshka is infused and cooled. Or you can lay out the cut ingredients in a serving bowl and pour in the bubbling kvas. It’s a matter of preference, many like the neutral thick part and the rich kvas with bubbles. After infusing, the taste becomes more even, as the components soak up each other’s flavors.1 liter kvas, 1 pinch salt
- When serving, add a spoonful of sour cream to the okroshka.
