Raspberry preserves
Raspberry preserves are one of the healthiest preserves. Today we will make raspberry preserves so that the syrup is glossy and the preserves are incredibly aromatic. The secret lies in infusing the berries in syrup and a two-stage cooking process. According to our recipe, the preserves can be stored for a long time without spoiling.

Ingredients
- 1 kg raspberry
- 1 kg sugar
Instructions
- Prepare the raspberries and sugar. Inspect the berries for debris and insects.
- Add water, any small debris will float to the top.1 kg raspberry
- Drain in a sieve, no need to dry. Transfer to a suitable pot or basin. Do not use aluminum cookware, as it will oxidize. Add sugar and mix.1 kg sugar
- Leave for 6-8 hours for the raspberries to release their juice.
- Transfer to the stove and cook over low heat until foam appears, which must be collected with a skimmer.
- Let it simmer for 10 minutes, then turn off the heat and let the raspberry preserves cool completely. Then repeat the process, this time there will be no foam. If the berries are watery, you can increase the boiling time to 20 minutes for a thicker preserve.
- Pour into jars that have been sterilized in the oven or microwave, seal with lids. Raspberry preserves are ready. It is sweet, aromatic, with a glossy syrup. Yield – just over a liter.
