Saj ichi
Saj ichi is the name of a traditional Azerbaijani frying pan with a smooth deepening in the centre. It is used for fast frying of meat and vegetables on a fire. And the composition of the dish can be very diverse. It is invariably recommended to add pomegranate seeds, which create the desired flavour. In the absence of special dishes, you should take a thick-walled cast-iron frying pan and cook on the highest heat of the stove.

Ingredients
- 150 g chicken fillet
- 150 g zucchini
- 150 g bellย pepper
- 150 g champignon
- 100 g red onion
- 2 clove garlic
- bunch dill
- ยฝ pc pomegranate
- 30 ml vegetable oil
- ยผ tsp salt
- ยผ tsp pepper ground
Instructions
- Prepare everything you need. You can use both fresh and frozen vegetables. In the recipe the champignons are pickled.
- Heat a thick-walled frying pan with vegetable oil. Add the onion cut into petals and rather large cubes of zucchini.150 g zucchini, 30 ml vegetable oil, 100 g red onion
- Fry over high heat, stirring occasionally, until light brown. Put aside on a plate.
- If necessary, add a little oil and send pieces of bell pepper and halves of champignons to the pan.150 g champignon, 150 g bellย pepper
- Fry for a couple of minutes, just like the previous batch.
- And at last, put the chicken fillet, cut into cubes, into the pan.150 g chicken fillet
- Keep it there for 3 minutes, then return all other components to the pan. Add garlic cloves, chopped dill, salt and pepper.2 clove garlic, bunch dill, ยผ tsp pepper, ยผ tsp salt
- Mix, continue frying for another 2 minutes. Sprinkle with pomegranate seeds.ยฝ pc pomegranate
