Kefir crepes
Kefir crepes in a frying pan turn out to be very tasty, tender, and rosy. At the same time, they are very thin and do not break, so they are perfect for sweet fillings. If you do not like sweet pancakes or will use them for savory fillings, you should reduce the amount of sugar by half.

Ingredients
- 200 g kefir
- 180 g flour
- 2 pcs egg
- 220 g water
- 2 tbsp vegetable oil
- 2 tbsp sugar
- ยผ tsp baking soda
- ยฝ tsp salt
Instructions
- Prepare the necessary ingredients. You can use kefir of any fat content, in this case, 3.2% was used.
- Wash the eggs, crack them into a deep dish and add salt and sugar. Beat with a whisk or mixer until light foam appears.2 pcs egg, 2 tbsp sugar, ยฝ tsp salt, ยผ tsp baking soda
- Stirring the egg mixture, carefully add a cup of boiling water so as not to get burned.220 g water
- Immediately pour in all the kefir and mix.200 g kefir
- Add the flour mixed with baking soda in small portions and mix until smooth without lumps. Pour in the oil. This is necessary so that additional oil does not need to be added to the pan during cooking.180 g flour
- Grease the pan with a small amount of vegetable oil and heat it up. Using a ladle, pour the batter into the center of the pan and spread it over the surface.2 tbsp vegetable oil
- Fry over medium heat for about 2 minutes. When the dough darkens slightly and the edges begin to peel off the walls, flip the pancake to the other side. Cook for another minute. The main thing is not to overdry it so that the edges do not crack. Cook all the pancakes in this way. There is no need to grease the pan with oil anymore.
- Thin kefir pancakes are ready. Serve warm. It is very tasty to eat such pancakes with jam and sour cream.
