Baked cherry cheesecake
On the table is a baked cherry cheesecake made from oatmeal. Replacing flour with oatmeal flakes in a classic shortcrust pastry reduces its calorie content and gives it an unusual taste and crispy texture. The cottage cheese layer is incredibly tender, and the fragrant cherry complements and enhances the flavor.

Ingredients
- 1 cup oatmeal flakes
- 70 g butter
- 150 g sugar
- 3 pcs egg
- 300 g cherrie
- 400 g cottage cheese
- 2 tbsp cornstarch
- 100 ml water
- 150 g sour cream
Instructions
- Prepare everything you need. You can use fresh or frozen cherries.
- Grind half of the oatmeal flakes almost to a flour state, and add the rest to the bowl of the food processor. Add cold butter, egg yolk, and a tablespoon of sugar.1 cup oatmeal flakes, 70 g butter, 3 pcs egg, 150 g sugar
- Process until you get a thick dough.
- For the cottage cheese layer, put cottage cheese in a bowl, break two remaining eggs and add the white from the third, 50 grams of sugar, a tablespoon of cornstarch, and sour cream.150 g sugar, 3 pcs egg, 400 g cottage cheese, 2 tbsp cornstarch, 150 g sour cream
- Blend with an immersion blender until you get a smooth cream. It will be quite liquid, and that”s how it should be.
- Distribute the oatmeal dough on the bottom of the baking pan, making small borders of 3-4 centimeters.
- Pour the cottage cheese mixture. Place in the oven and bake at 150 degrees Celsius for 20 minutes. Leave in the turned-off oven until completely cooled.
- Optionally, make a berry layer. Here it is cherry, but you can choose something else to your taste. So, wash the cherries and remove the pits. Put them in a saucepan and add the remaining sugar.300 g cherrie, 150 g sugar
- Bring to a boil. Dissolve cornstarch in 100 ml of water and pour it into the cherries.100 ml water
- Cook for a couple of minutes until thickened. Let it cool.
- Remove the cold pie from the baking pan.
- Spread the filling on the surface of the cheesecake.
- The oatmeal cheesecake is ready.
