  • 20 g cornstarch
  • 1 pc egg
  • 40 g sugar
  • 50 g honey
  • tsp ginger root
  • tsp baking powder
  • tsp cinnamon


  • Prepare the necessary ingredients. Use dried ground ginger, raw ginger will not work. If you don"t have cornstarch, you can replace it with the same amount of flour.

  • In a deep bowl, combine all the dry ingredients: flour, cornstarch, baking powder, sugar, cinnamon, and ginger.

  • Mix with a fork. In the bowl of a food processor, add the butter and process until smooth. Add the butter to the dry ingredients. Wash and beat the egg. Pour in the honey. If the honey is too thick or sugary, it needs to be slightly heated in a water bath or microwaved for a few seconds.

  • Knead the dough. It is preferable to do this with a mixer using a paddle or spiral attachment. But you can also knead it by hand.
  • Divide the dough into 4 parts, cover with plastic wrap, and refrigerate for 30-40 minutes to chill.

  • Take out 1 part of the dough, roll it out to a thickness of about 5 millimeters, and cut out shapes with a cookie cutter.

  • Place on parchment paper for baking. Place in a preheated oven and bake for 10 minutes at a temperature of 180 ℃ until lightly golden. The main thing is not to overcook them so that the cookies remain tender.
