Russian crepes with cottage cheese

Ingredients
For the crepes
- 250-280 g flour
- ยฝ liter water
- 3 pcs egg
- 1.5 tbsp sugar
- ยฝ tsp salt
- 1 tbsp vegetable oil
For the filling
- 400 g cottage cheese
- 2 tbsp raisins
- 2-3 tsp sugar
Instructions
Making the crepes
- Crack the eggs into a deep bowl, add sugar and salt. Whisk until smooth.3 pcs egg, 1.5 tbsp sugar, ยฝ tsp salt
- Pour in water. Add flour in small portions, constantly stirring. The result should be a smooth batter without lumps. If the mixture is too liquid, add a little more flour. Pour in vegetable oil, mix and start frying the crepes.250-280 g flour, ยฝ liter water, 1 tbsp vegetable oil
- Before the first crepe, grease the pan with a small amount of oil. Pour the batter onto the heated pan, spread it evenly over the surface and fry on both sides until golden brown. Cook all the crepes this way.
Making the filling
- Soak the raisins in hot water for 5-10 minutes to soften them. Then drain the water and proceed to make the filling. For this, mix cottage cheese, raisins, and sugar. If your cottage cheese is dry, add a little sour cream for a more tender consistency.400 g cottage cheese, 2 tbsp raisins, 2-3 tsp sugar
- Place the filling in the center of the crepe and fold it in a convenient way.
- Next, put them on a heated pan and fry until golden brown on both sides.
